A Keto Pumpkin No Bake Cheesecake



I absolutely love pumpkin and I love cheesecake so I decided to combine the two and see what I could come up with.  I think the results are pretty darn good, if you ask me.


Pumpkin No Bake Cheesecake

8 oz. cream cheese
1 cup pure pumpkin puree
1 envelope unflavored gelatin
1/2 cup boiling water
1/2 cup sweetener
2 tsp. vanilla
2 tsp. pumpkin pie spice
1 cup whipping cream

Set cream cheese out until it is room temperature.  In a medium bowl beat whipping cream with a mixer until stiff peaks form.  Set aside.  In a small bowl dissolve gelatin in boiling water.  In a large bowl beat the cream cheese until it is smooth, add the pumpkin and beat again until smooth and thoroughly combined.  Continue beating and drizzle in the gelatin mixture.  Add sweetener, vanilla and pumpkin pie spice.  Beat until well combined.  Fold in whipped cream.  Pour into pie plate.  Chill in the refrigerator four hours.  Serves 8.

Approximately = 5g carbs, 21g fat, 3g protein per slice (plain).



I served each slice with a dollop of whipped cream on top.  Definitely takes care of any pumpkin dessert craving you might have.  Perfect for the upcoming holidays.  I have a feeling I'll be making this one a lot.

Lime Gelatin Dessert




I've seen this recipe before, but pretty much dismissed it for years and years.  That is until I realized it is perfect for keto!


Lime Gelatin Dessert

1 large box sugar free lime gelatin
1 8 oz. package cream cheese - room temperature

In a blender combine gelatin and 2 cups of boiling water.  Carefully pulse to combine.  Add cream cheese and blend until smooth.  Add cold water until you reach the 4 cup mark.  Pulse again until well blended.  Pour into a 9" X 13" baking dish.  Chill for 4 hours until set.  Cut into squares and serve.


I understand this recipe is from the 1950s and was rather popular in its day.  I think it is tasty enough it should be popular once again.  Originally served as a salad rather than a dessert, but to me I think it makes a great dessert.  Definitely quells a sweet tooth.  Served with a dollop of whipped cream on top.  Yum!

The Healthy Fats I Consume



For years and years I've been told don't eat fat.  Eat lean, it's healthier for you.  Wrong!

Boy, oh boy, is that ever a bunch of hogwash.  Our bodies, especially our brain, need fats to function properly.  But not just any fats, because just like anything else there are some fats out there that are not good for us.  For best nutrition, bang for your buck, you want to stay away from the unhealthy fats and choose the good ones.  Here is what I choose.


Avocados & Avocado Oil

Nuts & Nut Oils

Coconut Oil & MCT Oil

Toasted Sesame Oil

Olives & Olive Oil

Butter - Yep!  Butter is good for you.

Cream

Sour Cream & Cheese

I remember being told that avocados are "fattening".  Well they are fatty, but not fattening.  And so delicious.  I love avocado oil for salad dressing.  Nuts are a big part of my diet now, especially almonds.  Coconut oil is wonderful for baking and toasted sesame oil drizzled over stir fry or egg roll in a bowl adds another layer of flavorful deliciousness.  Butter on veggies or on a keto waffle, oh my goodness.


And cream.  Lovely, lovely cream.  Every day I drink a cup of coffee with cream and MCT oil in it.  It is the best part of my morning, I swear. 


No longer am I afraid to consume fats.  I enjoy them on a daily basis.  The biggest thing for me to overcome since starting my keto journey is that fat is good.  Fats don't make you fat.  That is false information we've been fed (no pun intended) for years and years.

I'm over it!
